Blackberry Raspberry Chaffles

Equipment

  • 1 waffle maker I used a Cuisinart but there are many less expensive waffle maker on Amazon or at your local hardware store.
  • bowl and whisk
  • 1 cheese grater

Ingredients

  • 2 tbsp melted butter plus extra for the waffle iron
  • 2 cups mozzerela cheese grated
  • 4 eggs
  • 1/4 cup almond flour
  • pinch salt
  • 1 tsp vanilla
  • 1 cup raspberries
  • 1 cup blackberries or substitute with Keto friendly berries of your choice.

Instructions

  • Preheat the waffle iron so it's ready when your batter is finished.
  • Melt the butter and grate the cheese. Set aside.
  • In a bowl, whisk together four eggs, the salt, and vanilla. Mix in the almond flour. Add the grated cheese and mix well. Mix in the melted butter.
  • Clean the berries and put in a bowl so everyone can help themselves.
  • Lightly grease the hot waffle maker. Spoon 1/4 of the batter into the maker and cook each chaffle for about 3 minutes until crisp and golden.
  • Serve with berries and enjoy!
